I would rather.. & Pancake Bacon!

Congratulations!! You've survived another week and now it's time to relax or party-- whatever best suits you! This week has seemed along but in all reality, I literally blinked on Monday and it's now over. 
This week, I stumbled upon a blog that I've enjoyed stalking... Mariah @ Food, Booze, & Baggage. There, she blogs about life, food, travel, and her decision to not have children with her husband (hashtag to each his own, right).
It was there that I got the idea for this post but don't worry, I'm not going to fill it with stuff like "I'd rather be poor and happy than rich and sad" or "I'd rather have brains than beauty".. nothing silly like that. Also, I want to share a cool recipe that I tried this week. Easy and delicious!!
So enjoy, have a great weekend, and don't forget to Backthatazzup!

I would rather...

spend a night watching Redbox movies on my couch than go out to a bar and barely remember anything the next day (thanks Vegas bombs)!

choose to be with someone who's acknowledging your weaknesses rather than judging your flaws!

go hungry than eat raw fish or liver and onions!

wear flip flops in the winter than take five minutes of my time to find matching socks and both pair of shoes!

have one person who loves me with all of their heart than a million who just act like they do!

be at the river with a cold beer in my IWYP koosie than on the beach, where there are sharks!

show my true feelings/emotions than keep everything bottled up inside until I go insane!

cry when you're yelling at me so you'll stop than listen and stick up for myself!

sleep in and stay up late flipping through countless, boring shows on tv!

try my luck at something than not do anything at all and be left wondering what would have happened!

4 cups prepared pancake mix
12 precooked slices of bacon
Heat up your griddle or frying pan, add a little butter and pour pancake batter into 12 x 3 inch strips. Carefully lay cooked bacon slices in the batter and wait until the pancake edges are cooked, then flip them over and finish cooking. Add a little butter and syrup and dig in!

Humpday Confessions: Stupid things I do (for photos)

Happy Hump Day!
This week is halfway over-- can I get an Amen?
It's been awhile since I've made some confessions and what better to confess than stupid things I OFTEN do for photos!? I love a good photo, especially if I can do something for a laugh; even if it's just my own.
So today, I confess, with pictures-- stupid photos.
Rob let me paint his toes (well he was too tired to put up a fight). As much as I HATE feet, I did it and took photos!

Everyone needs a good photo with Bugle claws. Am I right or am I right?

Yes, I will wear a child's tutu on my head (while babysitting, if the kid is happy)

Because striking a pose in the middle of Target, in a stupid hat.. is trendy.

And for the finale, this was awhile back.. passing out drunk in a hotel room, only to wake up and find that your friends have destroyed your hair, taken photos of you posed (asleep) with beer bottles and liquor, and then getting up and posing.

The Honey-Do List

Being that I am THE ultimate list maker (and highly OCD when it comes to it-- everything has to be written flawlessly and no one is allowed to write on said lists), I thought it would be a blast to jump on the bandwagon and share one of my crazy lists with you. 
I figured it would be best to share an actual Honey Do List that I have given Rob.. for your enjoyment, read on.

  1. Clean the toilet. This means actually using the toilet brush to clean it-- NOT pouring bleach in the toilet bowl, watching Myth Busters, and then flushing.
  2. Dust the metal rack above the bar area. And NOT with your work shirt or a clean towel. *I do the laundry, not you*
  3. Stop blowing your nose in the extra work shirts you take each day on your jobs. Whether the snot dries up or not, it's gross and you will do your own laundry if this continues (and not with my pretty smelling detergent and softener).
  4. Wipe off the bathroom counter with a Clorox wipe. I don't have facial hair and if I did, I wouldn't leave it on the counter as if I was a proud caveman or 13 year old that just got his first chin pubes.
  5. If you are going to mess up the couch cover while napping, fix it-- every.single.time/day. 
  6. When getting out of the car, make sure you take your spit/dip bottles with you. No one wants to look at that shit.
  7. Take out the trash! This does not mean removing the tied up bag and placing it by the door, only to walk around it until you piss me off/I've nagged for 3 days, and then I end up walking it down the hall and throwing it away.

Blue Angels, Egg Rolls, Hospice.. Friday nonsense.

Happy Friday, Folks! I had mixed feelings with/about this week... what felt like a dragging pain suddenly slipped into a quick end. We began the week recovering from a long weekend of fun in the sun, enjoying a serious, ALL DAY boat trip at Pensacola Beach for Red, White, and Blues. But don't let me get ahead of myself here. Today I want to share a few things about what's been going on around here lately...

1. Saturday, July 12th was a serious day for those in Pensacola & Pensacola Beach, FL. Our beloved Blue Angels were back in there air again. Well over 100,000 people crammed our beaches (that was just the number that the toll bridge counted, thousands cover the sound in boats- like me) to see the epic show they always bring! Red, White, and Blues not only brought the crowds with their heads tilted toward the sky, mouths gaping open, but it brought the spirit of our town back too! My dear friends Kim and James invited us our on their boat and we gladly accepted. We met them at 7:30am at a boat dock across from our "anchor dropping point". Myself, Rob, Kim, James, their fire fighting friend Patrick, and his precious daughter Ava ventured across the sound for the show.  The Blues don't start the air show until 2pm but it's hectic and you must get a good spot. Lucky for us, Kim came prepared with a cooler full of jello and pudding shots to pass out to the boats around us in order to make "friends" and shimmy our way into a perfect place fit for kings and queens. We set up.. meaning the grill was reading, homemade floating beer pong table set up, kayaks in the water, and beers ice cold. Not only was the company and food good but the show was fantastic.  Win for Team Jello Shots!
On a side note.. the bridges to get to the beach were backed up for hours.. seriously. The ONLY way to go to the Blue Angel shows is by boat (and bride those around you).

2. Were you aware that Gain AND Snuggle now make plugins?? Or am I the only person on the Earth to find out about this? I am a fiend when it comes to good scents around the house. Not only do I have a Scentsy burner but a Glade burner and two Airwick plugins. I would have more but Rob would go insane. I already get complained to about my use of Downy and Fabric Sheets-- #getoverit! I have now tried the Snuggle plugins and I adore them. I saw Gain for the first time (with my own eyes) and I'm wanting to try them now but I have to buy another holder-- or whatever, they aren't Airwick.  So they are next on my list. I got a wild hair to try the Airwick Cinnabon "flavors" and they are okay. I just love the fresh laundry scents. Have you tried them? Do it!

3. Have you ever seen the show Frankenfood? If you like cooking shows or crazy food combos, you should check it out. Rather than explain it, I'll just invite you to Google it. I was watching it the other day (hashtag ADDICTED) and a Contestant made Gyro Egg Rolls.  I know right then and there that I wanted to make them. While I got no photos of that adventure, the next night I decided that I would make "regular" egg rolls but with my own spin. Other than being tedious, this was a really good idea and loved by ALL.
I took a LB of ground beef and a LB of ground pork (this was way too much), three bags of shredded cole slaw mix (that contained carrots), Egg Roll Wraps, Asian Peanut Sauce- for dipping, Rice Wine Vinegar, and Tempura Oil. I used NO other seasoning on anything other than 2 tablespoons of margarine. 
I browned the beef and pork in a skillet and then added the peanut sauce towards the end, allowing it to mix with the juices that came out from cooking. I had time to rest this overnight but if you don't, let it sit in the juice for at least a hour. After sitting, strain very well-- it cannot be wet. Be plentiful with the sauce when adding to the meat. I wouldn't use an entire jar/bottle, but most of it. Set it aside.
Put the two tablespoons of margarine in a large saucepan and allow it to melt on LOW. Then add your shredded cole slaw-- please remember that you need to change the amounts of items when it comes to the amount you are making!! I did not cook this completely. I just allowed it to take a "touch" of the crunch out of it. You want it to have a bit of a "bite" when it's in the actual egg roll and it will cook at a bit when you fry it.
Anyway, I eyeballed how much Rice Wine Vinegar and Tempura Sauce when I was *slowly* "warming" this. I happen to love Tempura Sauce so I would just do it to taste. With that being said, taste your meat too.  The flavors are going to "mesh" together so keep that in mind. I turned the heat off and after taking this off the burner, I allowed it to sit in the juices and absorb them. Because I had extra time, I strained this out of the juice and allowed it to chill overnight with the meat (seperately) but if you don't, just allow it to come to room temp.  Since you've drained your meat and your veggies very well, you can mix them together and pull out your egg roll wraps. DO NOT give them time to dry out. Don't bother pulling them out of their package. Set yourself out a little bowl of warm water because it's going to seal them closed. Most egg roll wrap "containers" will show you how to roll them... I've already gone way too much into detail so you should just Google again to find directions. Anyway, do one heaping spoonful of your concoction, roll up, and we chose to deep fry at 375 degrees until golden brown. SO.DAMNED.GOOD. I served with fried rice and everyone loved me-- I didn't bother telling them it was Rice Roni. Shhhhhh.

4. As long as I've lived in Pensacola, FL (born and raised), I've known and become accustomed to the up and down weather, humidity, and bogus saying that "Southern Women don't sweat, they glisten"-- WHHHHHHHHHHHHHATEVER! The last thing that I would have expected is to have cool weather over the past couple of days but as if God simply smiled upon us, we have had an evening in the high 70's and this morning it was in the high 60's. Now that doesn't mean that it's not blazing hot, enough to make you want to scream and drown yourself in the river, but it makes a big difference. Can we please have mornings and evenings like this for the rest of the summer? Pretty please???

5. Since my son passed away (no I'm not being a cry baby or whining-- promise), I've had a passion for working in Hospice with Bereaved Parents. No one was available to help me after Miller passed away and I just knew that someone that had walked a mile in my shoes could cater to my needs.  Well, low and behold, one of my work contacts hooked me up with the Volunteer Supervisor with our local Covenant Hospice and I'm signed up to start with them.  For those that aren't aware-- in some areas, it's hard to get involved with volunteering.  I would love to make a career out of working with Hopsice and this individual knows this.. I'm so incredibly stoked!  I know that my passion is giving back and helping others and doing it in my son's name just makes me feel that he didn't die in vain.
I can't wait--- training starts the 29th and it's a pot luck.. so I'm sure to win the hearts of ALL of them.  Not only through the depth of my heart and passion but through their bellies!

Slap Yo' Mama Fried Green Tomatoes

It's no surprise that I'm a southern girl and us southern girls love some fried green tomatoes. But they have to be done right.. so let me share with you the recipe that never fails while I continue to recover from this weekend's Blue Angel Boat Trip.
Here's a quick sneak peek though..

and now the yummy goodness!

3 or 4 large firm green tomatoes 
2 cups vegetable or peanut oil, for deep-frying 
1 cup buttermilk 
2 cups self-rising flour 
Slap Yo Mama Seasoning (to taste)

Slice the tomatoes 1/4-inch thick. Lay them out in a shallow baking pan and sprinkle with salt. Place the tomato slices in a colander and allow time for salt to pull the water out of the tomatoes, approximately 30 minutes.
In a skillet (I use a cast iron), heat the oil for deep-frying over medium-high heat.
Dip the tomatoes into buttermilk, then dredge them into flour with a dash of pepper. Deep-fry until golden brown. Keep warm.

Firework overload & Puppy Love

I hope you all enjoyed your Independence Day! Ours was decent up until a certain point.. #bitchesbecray-- that's all I'll say. I digress. Has anyone ever wondered what $1,000 of fireworks looks like? Well, you're looking at it!  For real. Not only did Rob and I celebrate our two year anniversary on July 4th but we joined his coworker and family for some celebratory shenanigans and they tore the house down in the firework department. 
Hopefully all of your digits are intact, ours are!

Before bitches went cray out our get together, we enjoyed an afternoon BBQ with horseshoes, yummy ribs and brisket, and just some good ol' family time-- with someone else's family of course. Rob's family is in Anchorage and I still have no idea what mine did.  We used to have some awesome pool parties and BBQs but since my Mother cannot be out in the sun anymore (#melanomasucks), they just don't do much. I think that next year we will stick with the family or more carefully choose who we hang out with.
(long story short, Rob's coworker's sister accused someone of stealing her stuff that she had inside and came running out of the house with a butcher knife and ended up frisking everyone and so on and so forth-- NOT the kind of get together that I'm used to)

As some of you may have seen in an earlier post, I rescued a Pit Bull puppy.. Indy. We had so much fun keeping her over the weekend and really fell in love. Had we been able to keep her where we live, she would still be here.. more than likely cuddled up on the couch with me. This dog was the coolest little gal ever! She slept in bed between us, just nestled up like a little baby. She was not a little whiny brat but just really cool.  We took her to the 4th of July party with us and she behaved herself so nicely.

Little blue eyes even got along with Levi. He was enamored with her. When we went anywhere, I would wrap her in a blanket or towel and she was just so content. 
Rob and I ended up finding her a great home with a guy that has another Pit Bull that is almost one year old-- this guy and his girlfriend are already so in love. We are friends on Facebook and I'm tickled pink so see all the cute posts and pictures they've added since Sunday. Even though getting rid of her has given me a pouty lip, I know that when the time is right.. we can get our own Pit Bull and everything will be perfect.

Hopefully everyone was able to spend time with those that they care about or at least have a little fun on such a fun and meaningful holiday. I can't wait to see/read about all of the good times that were had!!

Listen, this isn't the first time I will talk about my pet peeves on this little interwebz space of mine.. nor will it be the last (sorrynotsorry). I've got a plethora of peeves that drive me up the wall and I will be the first to admit that I need to get a handle on many of them-- BUT, I will also tell you that I am only human and that sometimes, there's a drivng force behind someone's "sheer insanity". Just to let you in on a little personal peeve, I've had this post drafted for over a month (plus) and I've just let it sit. It's 1:40AM on July 2nd and I'll be damned if I let another Wednesday pass without publishing this bad boy. Hashtag Squashthatpeeve.

All that nonsense aside, I'm super stoked to throw myself back on the bandwagon and link up with the lovely Kathy @ Vodka and Soda and make some long overdue confessions today~ HUMP DAY! Join the fun.. you know you want to and you know you need to! 

Pet Peeve Confess Sesh...

I’m watching a TV show that I’m very interested in.. it happens to be one of my favorites (and this is known).  It’s a pivotal point.  And you ask me a stupid question—like.. “why is this pen broken and put in the basket?” (the place where we keep pens and other crap on the counter) Is this necessary? Do you want me to suffer a brain aneurysm from holding in my anger and not unleashing the fury verbally on you?

You ask me a question and I tell you “I don’t know” yet you continue to ask me about the same subject, after I’ve told you I have no idea and you get upset that I don’t know anything and carry on. Is this drive Jamie bat-shit crazy day? Better yet, send Jamie straight to Planet Apeshit for a cocktail or cause her to throw herself out a 2nd story window day? I’ll do it, I swear.. I know that I’ll only make a fool of myself and end up getting evicted and having to pay for a new window and an insurance copay—but still. I will do it. HashtagDon'tMakeMeTellYouIToldYouSo

Being sick for a couple of days and going to the ER.. letting your work peeps know that you are feeling better and getting a text at 11:36pm, after you are asleep, saying that you can take off the following day to get better. Knowing that these folks are aware that you need the works-- getting up the next day and trying to get in touch with someone from the office from 7:30-8:30am by text and phone call and getting no answer, only to drive ALL the way across town and find out that someone is already in the office that is NOT capable of doing your job and having to turn around.
Seriously? If I tell you I'm better and don't respond to late night text.. don't count me out. I need money just as bad as the next person and I went to the ER last night so I could assure myself better the next day to perform in the office. Now, I'll sit at home and work.. because Clients will call me, off the clock and get no pay.
(I've been sick since Monday with a horrid headache, not able to eat or drink. Diagnosis was dehydration and severe migraine-- I've had chronic migraines for years)

Five to six days a week, I take Rob to work. All I really have to do is roll out of bed, put on boxers or PJ pants, pee, and be gone. It's not that big of a deal because I'm used to the fact that his coworker is a bitch and could totally come and get him but is a lazy fatass, among other things. Along with the fact that usually I'm getting up HOURS before I have/need to get up for my job.. for which I never complain or really get any gratitude. That's besides the point. My point, however, is that each and every morning when I have to get up for this fucking chore duty, Rob lets his alarm on his phone go off at least six times in my ear, makes his crazy bodily noises, and whines like a 10 year old. I've mentioned it before and I don't know how much more I can take of it but apparently things are not going to change-- what's a girl gonna do?

Speaking of stupid noises.. why in the hell would anyone enjoy/like/leave on their stupid keypad or keystroke cell noises? That has got to be one of the most annoying things ever. Number one, you aren't cool if you can type with one finger fast and you want people to hear it. Number two, just in general.. no one cares. Number three, STFU before someone kills you. Back to Rob in bed with his alarm going off in my ear-- yeah, he likes to text his coworker too.. it's amazing he's still alive.

So.. omg, I'm really not a Bitch, promise! This is totally all I'm gonna share with you. And I'm totally late on doing so. What I will tell you is that I rescued a Pit Bull Puppy and she's so totally awesome besides having worms (I refuse to tell Rob and will get it treated tomorrow). We can't keep her so I have to find her a home but she's damned cute.
I'm calling her Indy for Independence. OMG I want her!!!

Oh and today is mine and Rob's 2 year anniversary.. that's a whole 'nother story.

River Rats

As I write this, my nasty sunburn hasn't yet turned into a beautiful tan.. even if it's only on the front of my body, but I'm totally willing to look past all of that because this Sunday was one of the funnest days to date on Blackwater River!

My very good friends Kim and James have a beautiful house on the River and invited us over for what I thought was going to just being a ride around but it turned into so much more of an adventure, as usual. I should have known!
It was such a beautiful day so we packed up some goodies and met more friends as one of the little beach areas, their English Bulldog even came along too! 

James and his EMT buddy, JR, popped open a huge can of peanuts and grilled them along with some delicious chicken, burgers, fresh veggies, and hot dogs. Gourmet stuff folks! I loved their little grill.. it was perfect for the Pontoon boat and apparently they use it every weekend. I recommend everyone getting one!

We all plopped our chairs in the water and chillaxed for hours just enjoying the beautiful day and scenery. I'm telling you, I was born to be a "River Rat". I could do this every weekend but honestly, it was a chore getting Rob out of bed before 3pm on a Sunday.

After about 5.5 hours on the River, we got back to Kim's house and decided that we would take the 4-wheeler out on the trails for a bit and visit her horses too. Originally we had planned to ride but things changed and we will do that another day-- I can't wait!!
The trails were a lot of fun but a bit challenging being that they were still a little washed out from major flooding a month or so ago.  I'm excited to go out again when things look more solid and I can really get my ride on!

I didn't get many photos of the horses because I was too busy playing with them. I used to be a barn manager and ride and BOY do I ever miss that. Horses are such beautiful creatures and these babies were precious!

Our next boat trip is already planned.. July 12th we are packing up the boats and heading out to Pensacola Beach to see the Blue Angels fly. I'm beyond stoked. We will be making a full day of it and starting early with a group of us and a couple boats. 
EPICness in our future!
