I don't understand.

There are so many things that I don't understand, especially lately.. in fact, more than I'm willing to admit and I'm kind of struggling with it. I suppose that it will all work itself out. Right? If not, it will just drive me insane and I will blog from the mental institution.  Woot!

So when I came across Erin's "I just don't understand" post and she mentioned some fellow Bloggers were starting this little "trend", I thought I would borrow the idea. XOXO!

I don't understand why every single time we decide to go to the Beach, no matter what time it is (Sunday it was around 3pm), the bridge is jam packed with people like Jesus is coming or something. It was stupdenous and such a waste of time.

I don't understand why Big Lots is so addicting (like Dollar General- ugh).  I could literally spend hours there and hundreds of dollars. It's not that all of the products are top notch and fancy but they have great bargains and cool stuff. (Just don't ever buy hair dye-- it's not worth it*)

I don't understand why I can't seem to keep most foods down lately yet I'm not losing weight.  You would think that if I'm puking most of the very few bites of food I consume up-- that I would be losing weight.  Yeah.. not so much.  Hashtag what gives.

I don't understand why it's so difficult to get a decent photo with Rob. Either I look horrible and he's being photogenic or vice versa. I basically had to threaten his life the other day in order for him to stand still and get this photo and I didn't like how it turned out. Granted, we just decided last minute to head over to a local beach.. it really was such a beautiful day and I'm thrilled that he let me take the photo and I actually smiled!

I don't understand why there's never anything good on TV in the evenings. I'm not interested in the majority of silly sitcoms and it seems that most of the networks are filled with stupid stuff. The Food Network reruns the same ol' stuff-- really.. Diners, Drive-ins, & Dives can only be seen SO many times. And tonight I literally cried when watching a lamb be caught and skinned on Bizarre Foods. We've pretty much watched all there is to view on Netflix.. can someone please call them and tell them they need to come out with new stuff and speed up the process on Orange is the New Black Season Two?!? Thanks!

I don't understand when I am ever going to feel happy with myself! -230lbs lbs later and I still see myself as this huge, fat bastard and I hate it.  Plastic surgeons have told me that in order to "fix" the issues that bother me, I would require surgery for resolve stuff. What really bothers me is my tummy. I had a tummy tuck in 2006 and two months after (before I could even stand up straight and had my drains removed) I flipped my car six times and was ejected over 50ft into a tree-- this shredded every muscle in my stomach left me with a pooch.  I hate this.  It makes me feel fat and post pardum.  UGwhich H!

I don't understand why it's so difficult to pick Blackberries! I've got lovely stickers in my fingers now but I had so much fun getting them-- despite the cuts and scrapes I've got on my legs! I ate a few by themselves but Rob made some cupcakes and mixed them in.. he said they were delish!  I can't wait to go and get blueberries off my Sister's trees.  She's has SO many and they are yummy!

I don't understand how everyone isn't head over heels in love with Levi like I am. He's so precious and loving. I can't stnad to be away from him and my heart just aches when I am. He's such a good little baby.  I will never understand how or why people don't love puppy dogs like little babies.

A different kind of Caprese Salad

Last week I got so many comments and emails about my Zucchini Recipe so I thought I would share another favorite. Zucchini and Squash are abundant this time of year and so good for you! And who doesn't love a Caprese Salad? This dish is easy with some BBQ or as an appetizer. It surely won't disappoint.  Enjoy!

Raw Zucchini Squash Caprese Salad

  • 2 medium zucchini or 4 cups sliced
  • 1 large yellow summer squash or 2 cups sliced
  • 2 cups grape tomatoes, halved
  • 1 cup fresh basil, coarsely chopped
  • 4 ounces mozzarella, cubed
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoons salt
  • 1 teaspoon garlic powder
  • pepper to taste


Add all vegetables, basil and cheese to a large bowl. Whisk dressing ingredients together in a small bowl and toss over vegetables. Gently stir to combine. Chill or enjoy immediately. Keep refrigerated for up to 3 days.

Sleep with your eyes closed!

"Sleep with your eyes closed" sounds like the title of a scary book or a warning you get from the Concierge when you check into an old, Bourbon Street Hotel in New Orleans that is known for their history. But for me, it means so much more! 

See, there are some people that get twitching and other weird phenoms when they don't get enough sleep or over stress-- I'm one of said weirdos. Months ago, I would feel my chin randomly twitch in a certain spot and I would wig out (you can see it here!). Wildly, I was able to catch it on camera. My right eye would do the same from time to time and I was medically advised some of the causes and when I got my new glasses I was basically told to get a lot of rest, CHILL OUT, and also given prescription eye drops because some other minor problems I had could possibly be solved-- often I would feel like there was an eyelash in my eye which turned out to be a mild allergy, almost like dust in my lower lid.

This past Saturday was a normal day and around 8:30pm, I started feeling like something was in my eye. Thus began the downward spiral of rubbing my eyes, whining, literally putting the entire tip of my pinky finger in the upper and lower lids of my eye in hopes to get whatever small planet that had landed there OUT! By Sunday, I decided I was going to patch my eye as well as tape it shut.  Listen, I'm not insane-- I come from a medical family and I'm not stupid.  This helped.  When I got to my Parent's house for our Mother's Day Family BBQ, the "medical staff" said I did a good job and I spent my time resting in front of the TV with a cold beer and an ice pack on my patched, retarded eye.

Being that I not only felt like I was going insane, I value my eyesight so I went to the Eye Doctor and was told that I have Recurrent Corneal Erosion (RES- a disorder of the eyes characterized by the failure of the cornea's outermost layer of epithelial cells to attach to the underlying basement membrane. The condition is excruciatingly painful because the loss of these cells results in the exposure of sensitive corneal nerves.) and there's been a SCAB floating around in my eye! I'm only one of the most OCD-doesn't-think-scabs-are-cool kinda person here so this grossed me out. The Doc explained everything to me, flushed me out, and sent me along my merry way. Not cool guys!

This little "disorder"  is total pain in my ass and is not fun.  And the excruciating pain is for real. Apparently this can reoccur just by opening a dry eye after a night of sleep too!
I don't know why, in life, these weird, medical things happen to me. I swear, I don't need any more stories to tell.  So now I need to figure out how to keep this eye lubed up, not to touch it, and get it healed. Just another day in Paradise, folks.

Yummy AND Healthy

Who likes yummy AND healthy appetizers? Oh and easy ones.. me too!!
That's why I've got to share this gem of a recipe with you.


Cooking spray
2 medium zucchini (about 1 pound total)
1 tablespoon olive oil
1/4 cup freshly grated Parmesan (3/4-ounce)
1/4 cup plain dry bread crumbs


Preheat the oven to 450 degrees F. Coat a baking sheet with cooking spray.

Slice the zucchini into 1/4-inch thick rounds. In a medium bowl, toss the zucchini with the oil. In a small bowl, combine the Parmesan, bread crumbs, salt, and whatever other seasoning you'd like (I used garlic powder and Cavender's Greek Seasoning- I don't put pepper on anything). Dip each round into the Parmesan mixture, coating it evenly on both sides, pressing the coating on to stick, and place in a single layer on the prepared baking sheet.

Bake the zucchini rounds until browned and crisp, 25 to 30 minutes. Serve immediately.

I won't be reading your blog if...

Thank you to my sweet friend Elizabeth @ Army Ever After for giving me the idea for this post idea.  While I've seen it done before, I figured I'd give it a whirl because there are a few things that will cause me to put the breaks on reading a blog and/or quickly clicking the little X when viewing your little interwebz space. While I've only been blogging for a year, recently I've put my little "hobby" on the back burner, and would never claim to be any type of pro at this-- I still have been following blogs long enough to know what I like and don't like... and what's annoying!

Listen, I want just as many followers as the next person but I stopped counting my "crowd" months ago. I love that you've stopped by and you want to follow along but I'm not just going to follow you because you left me a comment and you're following me. I only follow blogs that I am interested in.. those that are funny and have good content. Sorrynotsorry.

I'm a total t-shirt, jeans, and flip flops kinda gal.  Well, actually it's almost summer so I can often be found in Old Navy Capris. It's like my "uniform". I do polish up nicely but only when I have someone assist me shopping and find something that I'm comfortable in. That all being said, I'm not interested in fashion bloggers. Not only does stuff like that not keep my attention but it leaves me wanting to kick my own ass because most of those bloggers are skinny and I need to be on a diet!

All the cool bloggers are doing it.
One of the most annoying things is pulling up my Bloglovin feed and seeing half of the bloggers I follow have posted a review of the SAME product. While they all have different opinions, some quite humorous.. it's ridiculous that it's all happening at once. It's like a cool club that gets prizes. For those of you who have been around for awhile, remember when everyone was reviewing toilet paper?  Geeeeeez!

I blog everyday but I don't comment back.
Don't we all love those witty bloggers that have great things to say? Those that we can relate to and those that we feel the need to reach out to and share things with?  Because afterall, they are sharing things with us.. One thing I cannot stand is when you leave a comment and they don't comment back.  Okay, so they're busy and they can't get back to you.  But then they have a new post the next day and the next. So you comment more and still no reply. It's rude. Hashtag unfollow.

Our God is SUCH an awesome God!
I'm a Christian. I'm down with G-O-D (yeah you know me.. sorry, I had to). But I don't need every single post to be smeared with all kind of religion and I really don't want to read blogs like that.  To each his own and I respect that but it's not my bag.

Our State of Emergency

When things get rough, we're Pensacola tough!

For the first time in a long time, Pensacola and and surrounding areas are in a State of Emergency and there hasn't been a Hurricane.  Historic flooding that reports say dropped two feet of water in just a 24 hour period made for the worst Florida flooding in a generation. And it's pretty much the craziest thing I've ever seen. Normally, we have days to prepare for bad weather.  We can go to Walmart and get our bottled water, canned food, and batteries but this time the rain just came out of nowhere and kicked our ass!

Thankfully, we live on the 2nd story of a condo Downtown so really all we suffered from was about 14 hours of no power and no hot water. My Parents live a hop, skip, and a jump away from a major and popular Pensacola Road-- Scenic Hwy. Thank God they had no damage, other than their pool over flowing.  Here is a video that shoes some of the damage to that road...


A lot of this damage happened along Scenic Hwy where The Bluffs are.  This area is pretty historic to Pensacola and it's so sad to see. I've grown up going to The Bluffs and I hope that everything can be recovered. Here are a few more photos that were taken from around my Parent's neighborhood and Downtown where we live..

This is a video (I grabbed it off youtube) that shows footage from our Downtown area. You can get the idea of what Rob and I were living in for a couple of day. One wild thing that we did see, once we first ventured out, was that a HUGE blue business trash "can/dumpster" floated into a gym and smashed out their entire front store window.  It was pretty wild to see.  Also, cars fully covered in water, etc.

East Hill is a pretty well known and old area in the city.  This is some footage of the poor neighborhood that is so very damaged.  It's super sad and scary not knowing the future and how long it will take to fix things properly and safely.

The day after the storm, we went to pick up my best friend and she literally had to wade through water to get to our car because her neighborhood was too flooded. Insane!

One good thing that I can say is that I work for awesome people and companies.  My Boss and his wife are offering help to local residents who have damage and no insurance.  We will help them get everything cleaned out and remove all mold and mildew, etc. So.. this has by far been one of the craziest things that I have ever witnessed and I don't care to go through this again!! 

If anyone would like to make any donations, etc.. I've got a couple people's info that I fan provide. There are families who have lost everything.  In fact, we have Clients that are getting married in three weeks and they lost everything and were only able to get out of their house with their cat and their birth certificates. Another couple lost everything and have a 12 month old and 5 year old.  It's crazy-- send prayers.
